Pies and Cupcakes

This past week I was busy in the kitchen.

I was very disappointed with the meringue on my key lime pie.  It's been so long since I made meringue that I didn't really remember details.  So I used a meringue recipe that I really don't like, but I didn't know that till after 2 hours of beating meringue.  And so I used it anyway, but it didn't get all big and fluffy like I like.  And I cheated with this pie and used a pre-made graham cracker pie crust.  Don't tell anyone!
It was still a great-tasting pie, but it just would have been more impressive looking with higher meringue.  And without that store-bought crust!

Fabulous! Remember...there are veterans across the street...I'll trade you cupcakes for homemade lemon curd. Just give me a couple of hours notice!

Have you noticed that meringue doesn't do well in Humid Maryland? I've tried to make baked meringues and have yet to succeed. They stay chewy and never obtain the crispness I need to fill them with custard.

Yummy! I certainly would enjoy a slice of that pie accompanied by a cold glass of milk and for that matter a cupcake too!

I looked and looked a few years back for tips on whipping up meringue. I always add a pinch of cream of tar tar and a few drops of lemon juice. I forget where I read about the lemon juice. It's been a while since I have made it too. I'll never forget when years ago I made a perfect lemon meringue pie and got into our old VW bug and when the heater was turned on for the first time, specks of rust went into it!!

Wow, love those cupcakes, the shaded look to the frosting is really striking! Made me want to try making some now, not that they'd be up to that standard... :)

Toni - I never run out of work that needs to be done. I guess that's part of farm life.

Cindy - I don't keep cupcakes around the house much. All these ones were taken into my work. I've been wanting to make some more of those Swedish Butter Cookies, I'll let you know when I do. I need to find that recipe!

Leigh - They are tempting. Everything in moderation. That's why I give most my desserts away and just have a sample. But I had to keep the lime pie!
